Three things that make this recipe one of the best new recipes I have tried lately: 1. Cheese stuffed, do I need to say more 2. Using our recipe for Homemade Marinara sauce took this to a whole ‘nother level 3. The perfect balance of baked vs creamy. I will take this moment to really encourage you to take the time to make homemade marinara sauce, a jar bought from the store would do in a pinch but making your own from scratch really brought out such amazing vibrancy in the flavors. I definitely know that I will be making this again really soon. It was a total hit at our house.

Recipe Tips
- You could leave the sausage out and make this a vegetarian main dish.
- You can use the Homemade Marinara Sauce from Pot of Gold Recipes. Literally, just do it.
- ***If desired, you can divide the second half of the marinara sauce in half and add cream to one half. Pour plain sauce on top, then pour sauce with cream added on top. Then top with cheese and bake as directed
A rich one pan bake in the oven Italian comfort food dish.
- 1 pound italian sausage divided
- 1 cup diced onion
- 1 tbsp minced garlic
- 1 box manicotti noodles cooked al dente
- 24 ounces cottage cheese
- 16 ounces ricotta cheese
- 2 cups mozzarella cheese
- 1 cup grated parmesan cheese
- 3 cups spinach or chopped kale
- 32 ounces marinara sauce jarred or homemade
- 1/2 cup cream optional

In large skillet, brown sausage, garlic and onion. Drain. Divide sausage in half. Put 1/2 back into skillet and 1/2 into large bowl

Add cottage cheese, ricotta cheese, 1 cup mozzarella, parmesan and spinach or kale to large bowl with sausage. Mix well.

Stir marinara sauce into sausage in skillet. In large baking dish 9×13 or slightly larger put 1/2 the sausage and sauce mixture on bottom. Stuff cooked manicotti noodles with cheese, sausage, spinach/kale mixture. ****See below for sauce options. Pour remaining sauce over top of stuffed noodles. Sprinkle remaining mozzarella on top. Bake 350 for 40 minutes.
