This is a great recipe for beginners because it combines a two in one skill. Quinoa is something that if you make it wrong it literally tastes like cardboard. Let me help you avoid that fate. So there you are, that is by far one of my favorite recipes. So friends, let me share a few more cool tips for the broke or scatterbrained chefs out there. It is listed in the recipe that the onion should be a sweet onion, this, I feel is very important. We are putting raw onion in a salad, if the onion is too bitter it will be shocking every time you get a piece in your bite. So I stress here, the need for sweet onion. Another fun thing about making this dish is that I often change-up this recipe. So sure the recipe calls for corn, or cucumbers, or red peppers, but if I am being completely honest I have made this recipe with only beans and peppers haha. I mean sometimes it has been two weeks since the last grocery run and you are DESPERATE! So sometimes I don’t have half of the correct ingredients, and that is what is so cool about this recipe is you can substitute/change any vegetable combination your heart desires! The original recipe called for avocado, which I personally feel is green death. I hate it. But if you’re into that, there are some cool ingredients out there for you to personalize this however you want to!
On a side note I do realize that pairing an ear of corn with a salad that already has sweet corn in it may seem like overkill. Don’t judge me! Here in Minnesota the season for farm fresh sweet corn is too short for my liking. I have to get in as much as I can!
