Oh my god this is so good. Okay now that I have that out of the way, I will explain myself. This super simple appetizer has converted me. I am not reaaaally a tomato fan, but I couldn’t stop eating these. Mozzarella, cherry tomatoes, fresh basil, and a balsamic vinegar reduction makes these scary good and totally addicting. The flavors blend so perfectly together that even I ate a bunch of them. So we share these with you in hopes that maybe this will save your brain from coming up with the perfect appetizer for the New Years Eve party that you are hosting. Now maybe you got a little nervous when I said balsamic reduction. Don’t panic I swear it is easy, and on top of it we very creatively figured out how NOT to make this reduction. Which turns out to be a good thing because we figure out A.) These are delicious even without the reduction. and B.) Once you know what you did wrong the first time it is super quick to make it again. Because you know you already have all the ingredients out and ready. So be calm because we will talk you through how to make this reduction work.
- 1 box grape tomatoes
- fresh basil leaves
- 8 ounces fresh mozzarella
- 1/2 cup balsamic vinegar
- 1 tbsp brown sugar
- 1/4 tsp garlic powder (optional)
- toothpicks

In small saucepan, add vinegar, brown sugar and garlic powder(if using)

On low heat bring vinegar mixture to a simmer. Continue cooking until it is reduced by about 1/2 the amount or just starts to thicken. It will continue to thicken as it cools.

Transfer to small dish for drizzling

On a tooth pick, skewer in this order a grape tomato, a leaf of basil, a cube of mozzarella. Drizzle with balsamic reduction and enjoy!!
