Potatoes! I absolutely love soup and potatoes so imagine how excited I was by our newest recipe. The most savory and flavorful Cheesy Potato soup. Not to mention it is SUPER easy, just throw all your ingredients into the crop pot and let it do its thing.
You guys know I love anything that combines three of my favorites. Today it is easy, potato, and soup! I have a lot of favorite things when it comes to cooking but if I had to pick a super favorite it would be those three. What is fantastic about this soup is that it has so much savory flavor to it while still being a vegetarian option. So if you are ever in need of a perfect thing to bring to a pot luck this would be a winner. It is easy to make a ton, it is inexpensive, and also like I mentioned it is a great vegetarian option.
- 6 cups potatoes diced into 1/2 inch cubes
- 1 large onion diced
- 2 tbsp garlic or to taste
- 6 cups vegetable or chicken broth
- 2 cups water
- 1 tsp ground black pepper
- 2 cups sliced carrots
- 1 cup sliced celery
- 8 ounces cream cheese whole or lowfat
- 1 cup cheddar cheese shredded
- 1 tsp salt or to taste

Add first 8 ingredients to slow cooker

Cook on high 6 hours or low 8-10 hours.

Remove 1/3 of soup(do this in two batches). Blend in blender with cream cheese, 1/2 of cream cheese in each batch. Return to pot when blended smooth. If you have an immersion blender this could be used. If using an immersion blender, add cream cheese directly to slow cooker. Blend with the immersion blender until about 1/3 of soup is blended smooth and cream cheese in incorporated.

Slowly stir in shredded cheddar cheese.

Taste and add salt and pepper if needed.

Garnish with green onions, bacon, sour cream, and extra cheddar cheese if desired.
One could add 2 whole chicken breasts with the first 8 ingredients. If this is done, then remove chicken at blending process and dice or shred. Return diced or shredded chicken to soup.
I just love recipes that make enough for leftovers. As much as I love cooking there are days that are so crazy busy that the last thing you want to do at the end of the day is another chore! I am like one argument about dinner away from sounding like an angry housewife. The horror. So sometimes to avoid the classic fight I go out of my way to make a big meal the night before a busy day. This usually works unless code name: “Husband” decides to sabotage your dreams and takes the leftovers for work and eats half for breakfast and half for lunch. Then it is a night where you probably are going to make mac and cheese and beer like a total adult. Lets avoid this eventuality all together and make a huge batch of potato soup.
