SALSA. SO GOOD. I feel like I can seriously just leave it right there and not say anything more, but seriously this recipe speaks for itself. I will at least share a bit of behind the scenes and such. My favorite part about this recipe is that there is no tricks. It is so straight forward and obvious, but maybe that is what makes it perfect. It is no muss, no fuss, always perfect salsa. It is great on its own with chips or spread over a taco or breakfast eggs. The best part is that we had such a great opportunity to visit our local farmers markets and pick up some perfectly red tomatoes, and we that was when we decided to share one of our favorite with you.
One of our favorite ways to use salsa is to put it over fresh farm eggs.
Recipe:
A fresh flavorful salsa made from farmers market treasures.
- 2 large tomatoes
- 1 medium sweet onion
- 1 green bell pepper
- 1 jalapeno minced fine add more or less to taste for spiciness
- 1 tbsp minced garlic
- 1 tsp salt
- 1 tbsp minced cilantro optional

Dice tomatoes, onion and green pepper. Add salt, garlic, and jalapeno. Mix well. Stir in cilantro if desied

This salsa is a base to make many variations of salsa. Any combination of these ingredients is possible. Have fun experimenting until you find the perfect salsa for you. Optional possible ingredients include adding:
1 tbsp olive oil, 1 can rinsed black beans, 1 cup corn, diced watermelon, diced mango, diced cucumbers, 1 tsp cumin, 1 tsp sugar, 1 tsp red wine or apple cider vinegar, other varieties of hot peppers
I like to use a variety of tomatoes, some ripe, some not as ripe, roma, beef steak, different colors. If tomatoes seem extra juicy you can leave some of the juice behind as you dice, or slightly drain tomatoes before adding other ingredients.
Add more of less jalapenos or hot peppers to taste.
