Jasmin Rice Shrimp Scampi is actually one of my all time favorites. It is total comfort food but it is light enough that you don’t feel like a total slug afterwards. The dish has an easy garlic-y buttery taste to the shrimp that will appeal to the comfort food side of you, and the rice and peas will keep it light and almost refreshing so it is an ideal blend. It also takes hardly any time at all, you can be out of the kitchen and sitting down to dinner in about 20 minutes. You’re welcome.
Grocery List:
- Olive Oil
- Butter
- Salt
- Sweet Onion
- Large Uncooked Shrimp
- Red Pepper Flakes
- Jasmin Rice
Recipe Tips:
- Shrimp don’t cook for very long, they are done when they are pink
- Serve with Pino Grigio
- 3 tsbp olive oil
- 1 tbsp butter
- 1/2 tsp salt
- 1/2 cup sweet onion diced small
- 1 lbs large washed peeled and deveined raw uncooked shrimp
- 1/4 tsp red pepper flakes or to taste
- 2 cups hot Jasmin Rice
- 1/2 bag frozen peas

In saute pan heat olive oil over medium heat.

Add onion, sprinkle with salt and cook until tender.

Add butter to pan and melt.

Add shrimp to pan. Cook until shrimp turn pink and are cooked through and water evaporates 3-5 minutes.

Add red pepper, stir.

Add frozen peas and stir until thawed

Add hot Jasmin rice to pan and toss. Serve with a great crusty bread and perhaps a glass of Pino Grigio.
