I adore crock pot recipes. There is literally nothing better than being able to throw the ingredients in the pot and then come home from work to a meal already made. It is like having a glorious in home chef, but like you actually did all the work, but it somehow it doesn’t feel like that? Latin Chicken is a great meal if you are on a diet because it is delicious and low in calories. Basically this meal is a magic trick, first you get to come home to dinner already made and then you get to eat AMAZING healthy food and not feel like you are missing out!
Hello all! I adore this fall weather lately. It has inspired me to create dishes that are warm and orange if that makes any sense. Also I keep cleaning the house and lighting candles. Is it just me or do you also feel like nesting in the fall? I love a clean house snuggled in a large sweater with the smell of food in the crock pot coming from the kitchen! It is glorious.
This is such an easy meal to create, and it is one of my favorites because you practically can’t mess it up, I love crock pot meals, it is like super healthy, and it tastes like comfort food. So win, win, win, win, I guess!
A good tip if you want your latin chicken to be more visually pleasing then it is always a good idea to cut your ingredients into different shapes. So for example while the chicken and sweat potatoes work best as cubes, the pepper can be cut into longer slices to add contrast.
A southwestern stew, perfect for the crockpot
- 3 tablespoons olive oil
- 3 pounds boneless chicken breasts or thighs diced into 1 inch cube
- salt and pepper to taste
- 2 tsp teaspoons greek seasoning I use Cavender's All Purpose Greek Seasoning
- 2-3 sweet potatoes peeled and diced into 1 inch cubes
- 1 red or orange bell pepper diced large
- 1 large onion diced large
- 2 cans black beans rinsed
- 1 cup of frozen corn
- 1 large jar of salsa at least 24 ounces
- 1/2 cup chicken broth
- 2 teaspoons minced garlic or to taste I like A LOT of garlic lol
- 3 teaspoons ground cumin
- 1 teaspoon ground allspice
- juice of 1/2 lime

In dutch oven add olive oil, chicken, salt, pepper and greek seasoning. Cook chicken until starting to brown or well browned. It depends how patient I am or how much time I have.

In large crock pot (5 or 6 quart) add remaining ingredients. Stir well. Add browned chicken and all the juice and scrapings from dutch oven. Stir well. Cook on low for 6 hours (longer if you want or need to until potatoes are tender or on high for 4 or more. If it seems on the thin side you can lift cover and move to side a bit, to allow some steam and liquid to cook off for the last hour. Serve over rice or my favorite, quinoa. Quinoa recipe on Pot of Gold blog. Can serve with additional fresh chopped cilantro, and fresh lime wedge if desired.
