Quinoa
Alright let’s get started! I could eat this stuff until I make myself sick like a kid on Halloween without parental supervision. So I am going to open a beer and get started, because what is cooking without a drink and some tunes. My code name: “Husband” yes we will just call him that, is playing the guitar in the background and I think he’s decided that half of each song is all I will hear for now.
A great basic recipe for cooked quinoa
- 2 cups quinoa rinsed
- 4 cups chicken broth vegetable broth may be used for vegan
- 3 tablespoons olive oil
- 2 teaspoons minced garlic optional but most of the time I use the garlic
- 1/2 cup minced onion optional but most of the time I use the onion.

Quinoa has a bitter coating that must be rinsed off. Some quinoa comes pre rinsed, you will have to read your package to see if what you have is pre rinsed. I almost always rinse it again anyway to make extra sure. Put it in a very fine mesh strainer and run under cool water for several minutes.

In 4 quart stock pot put olive oil, onion and garlic, cook over low heat until onion is tender. Add chicken broth and rinsed quinoa. Bring to easy boil, simmer until liquid is absorbed. approx 20 minutes.

This is my basic go to recipe for quinoa!! I believe that one can never add too much garlic or onion to anything so really, I always use the onion and garlic. The only time I would not use it, would be if I was cooking it for a recipe that the onion and garlic would clash with such as a breakfast dish.
Here are a couple helpful hints about the recipe. You will notice that the quinoa is listed as “rinsed” that is SO important. Most quinoa you buy at the store will say somewhere on the label if it is pre-rinsed. If it says that, for the most part you are all set to go, I am paranoid and usually rinse mine anyways but it is not necessary to do that. If it does not say pre-rinsed then you have a little extra step that needs to be added to the recipe for it to turn out.
