To start off our November pasta kick we are bringing you one of my personal favorites, although I’m not sure one can pick a favorite pasta… thats kinda like picking a favorite kid. Our recipe for you is a perfectly creamy Alfredo Pasta to be eaten while wearing pajamas, with garlic bread, in front of the tv. Or maybe you could be romantic and like eat it in regular clothes with some wine and candles…I just know where I’ll be.
In the Pot of Gold house we have been watching a bit of Sopranos lately, a show that might be about eating pasta or maybe about a gang. I can’t decide which. Our cravings have been high however for a delicious pasta dish so we could fit right in. Being a major fan of Alfredo pasta we bring you today a creamy Alfredo Pasta with Peppers and Sausage. There is no easy way to make this particular recipe Vegan, but do not fear we have a great recipe in the works for all of you pasta craving Vegans out there! This recipe is however simple to ease into the vegetarian lifestyle as you only have to skip adding the sausage to the recipe.I am a super fan of this recipe because it may be the fastest and easiest recipe I’ve ever made. It consists of sautéing the veggies, cooking the noodles, and combining the creamy alfredo sauce. You know I love easy recipes so we were especially excited to share this one with you.
A comfort meal of alfredo, sausage, sweet peppers and mushrooms
- 1 pound italian sausage. I use turkey
- 1 onion sliced onions
- 1 yellow pepper sliced
- 1 red pepper sliced
- 8 ounces sliced mushrooms
- 2 teaspoons minced garlic
- 1 1/2 teaspoon basil
- 1 1/2 teaspoon oregano
- 2 containers whipped cream cheese
- 1 cup fresh grated parmesan cheese
- 1 cup mozzarella cheese
- 16 ounces cooked penne pasta

In large skillet brown sausage, drain grease if necessary

add mushrooms saute until cooked

add onion and garlic cook 5 inutes

add red and yellow peppers saute until tender crisp

add cream cheese stir unil melted

add basil and oregano stir

add parmesan and mozzarella mix well

Add cooked penne pasta. Mix well

Serve with grated paremesean, cracked black pepper
