A savory recipe for Swedish Meatballs that will remind you of home. Where we chose to take a variation from ‘traditional’ recipes was in creating the gravy. We chose to make a brown gravy using beef broth, whereas many Swedish meatball recipes have a cream based gravy. This recipe is one that comes from Grandma and you know they always seemed to know the best ways to make comfort food.✨

Ingredients:
2 pounds ground beef 90% lean or higher
2 large eggs
1 cup milk
1 cup bread crumbs
1/4 cup grated onions
2 tsp salt
1/4 tsp pepper
1/2 tsp allspice
32 ounces beef broth
1/2 cup flour
8 ounces mushrooms optional✨

Instructions:
In mixing bowl add, ground beef, eggs, bread crumbs, milk, onions, salt, pepper and allspice. Mix until well combined
Roll 1 1/2 inch meatballs.
Place meatballs in large skillet over low heat. Cook and turn to lightly brown on all sides. Cover and cook for 15 minutes. Remove cover continue cooking for an additional 10 minutes or until liquid is mostly evaporated.
SKIP THIS DIRECTION IF NOT USING MUSHROOMS If using sliced mushrooms, add to pan now and cook until at least 1/2 of the liquid is evaporated.
Pour 16 ounces of beef broth over meatballs. Cook on low for 15 minutes.
In small bowl (or shaker bottle) whisk together remaining beef broth and flour. Pour slowly into pan while stirring constantly to thicken into a gravy. Cook an additional 5 minutes. Serve over mashed potatoes or rice.✨

Recipe Notes:
If you don’t want to make your own gravy using beef broth you could substitute jarred gravy(use 2 jars) or powdered gravy mix(use 2 packets and follow directions on package) Follow the rest of the recipe as is.

Ingredients:
1 pound italian sausage divided
1 cup diced onion
1 tbsp minced garlic
1 box manicotti noodles cooked al dente
24 ounces cottage cheese
16 ounces ricotta cheese
2 cups mozzarella cheese
1 cup grated parmesan cheese
3 cups spinach or chopped kale
32 ounces marinara sauce jarred or homemade
1/2 cup cream optional✨

Instructions:
In large skillet, brown sausage, garlic and onion. Drain. Divide sausage in half. Put 1/2 back into skillet and 1/2 into large bowl
Add cottage cheese, ricotta cheese, 1 cup mozzarella, parmesan and spinach or kale to large bowl with sausage. Mix well.
Stir marinara sauce into sausage in skillet. In large baking dish 9×13 or slightly larger put 1/2 the sausage and sauce mixture on bottom. Stuff cooked manicotti noodles with cheese, sausage, spinach/kale mixture. ****See below for sauce options. Pour remaining sauce over top of stuffed noodles. Sprinkle remaining mozzarella on top. Bake 350 for 40 minutes.
***If desired, you can divide the second half of the marinara sauce in half and add cream to one half. Pour plain sauce on top, then pour sauce with cream added on top. Then top with cheese and bake as directed✨

Recipe Notes:
You could leave the sausage out and make this a vegetarian main dish.
You can use the Homemade Marinara Sauce from Pot of Gold Recipes.

Café au lait and beignets in the French Quarter. Would 10/10 recommend the beignets but would 2/10 recommend getting them at café du monde. The café was so ridiculously busy, the name must be because you are literally eating with the rest of the entire world who is visiting New Orleans.

Eating healthy has never been this easy nor did it taste this good. Homemade granola has kinda changed my life, I mean it’s the little things guys. Chewy, crunch, sweet, nutty, and honestly as good as any I have bought from a store. It’s easier than you think to make so now you can be one of those people who does things like puts homemade granola on their parfait✨

Ingredients:
2 cups old fashioned oatmeal
1 cup sliced almonds
1/2 cup sunflower seeds
1/2 cup chopped walnuts
4 tbsp coconut oil melted
1 tbsp maple syrup
1 tbsp honey
1/2 tsp vanilla
1/2 tsp salt
1/2 cup raisins
1/2 cup dried cranberries✨

Instructions:
Mix oatmeal, almonds, sunflower seeds, and walnuts together in large bowl.
Melt coconut oil in measuring cup. Add maple syrup, honey, vanilla and salt. Pour over oatmeal mix. Stir well until completely coated.
Measure raisins and cranberries into same measuring cup and stir to coat in remaining oil mixture. Save for later.
Spread granola onto a parchment paper lined sheet pan. Bake in 275 degree oven for 20 minutes.. Stir after 10 minutes. Add raisins and oatmeal. Bake for an additional 10 minutes or until oats are golden brown.
Recipe Notes
You can use a different combination of nuts if you prefer.
If you prefer a sweeter granola, an additional tablespoon or 2 of maple syrup or honey can be added.
Cool completely and store in a dry airtight container.

This traditional Italian soup, Pasta e Fagioli, started out as a peasant dish made with inexpensive ingredients that were on hand. If you have followed our recipes for any length of time, you know that “what you have on hand” is speaking our love language. This hearty soup of pasta and beans with a smoky pancetta is outstandingly good and easy to make. Interested? Peep the recipe below!✨

Ingredients:
8 ounces pancetta diced or small diced ham can be used instead
1 tbsp olive oil if needed
2 carrots diced small
2 celery stalks diced small
1 medium onion diced small
1 can diced tomatoes 15 ounces
1 can tomato sauce 15 ounces
2 cans cannellini beans, drained and rinsed 15 ounces each
1/2 cup green or brown lentils rinsed
2 tsp minced garlic
32 ounces vegetable broth more if needed
1 tsp rosemary or 1 sprig
1/2 tsp ground thyme
2 bay leaves
1/2 tsp ground black pepper
1 tsp red pepper flakes optional
salt to taste if needed
8 ounces ditali pasta
2 cups chopped kale optional✨

Instructions:
In large stock pot over medium heat, cook pancetta until browned and fat is released. (If using ham, brown in 1T olive oil). Add diced carrots, celery and onion. Cook stirring often for about 5 minutes or until slightly softened.
Add tomatoes, tomato sauce, beans, lentils, garlic, vegetable broth, rosemary, thyme, bay leaves, black pepper and red pepper flakes if using. Taste for salt and add as needed. Simmer on low heat until carrots and lentils are tender.
Stir in pasta and chopped kale if using. Simmer for an additional 5 minutes. Serve with crackers or a great crusty bread.✨

Recipe Notes:
This soup is most authentic taste when made with pancetta. A lightly smoked ham is a good substitute. Bacon could be used in a pinch, the flavor will be slightly different of course.
Lentils are not found in a traditional version of this soup, however we like the extra hardiness they add.
Kale is totally optional and spinach could be used as a substitute.
If you want to make this vegan you could leave out the meat all together and just cook carrots, celery and onion in olive oil over low heat.
If needed add additional vegetable broth as the soup absorbs.
