Hi Guys! I am so totally excited to share this recipe with you today. I love soda bread with a fiery passion. If any thing this is actually the food I look forward to the most when it comes to St. Patricks day. As promised we provided a slew of traditional Irish dishes but no meal would be complete without a bit of extra carbs.
A fun thing about this bread is that you can make it with white or wheat flour. I like it both ways and would be hard pressed to say which version I prefer. This bread is naturally crumbly and a bit on the drier side, which I adore, think of it as an Irish corn bread. As the bread gets older (if you don’t finish it right away) it tends to dry out more. A fantastic solution so that you don’t waste any of this goodness is to slather it in butter sprinkle on a bit of cheese and heat in the microwave until the cheese is melted. It is amaaaaazing and a total guilty pleasure of mine. I know it is a bit decadent but a girl has to get her kicks somewhere.
- 4 cups flour
- 4 tbsp sugar
- 1 tsp baking soda
- 1 tbsp baking powder
- 1/2 tsp salt
- 1/2 cup butter softened
- 1 egg
- 1 cup buttermilk
-
Add flour, sugar, baking soda, baking powder, salt and softened butter in bowl of Kitchen Aid mixer. Mix on low until combined. (You can use any mixer or mix by hand also)
-
Add buttermilk and egg. Mix until well combined.
-
Turn out dough onto flour dusted surface. Knead a few times and shape into a flat round approximately 8 inches round and 2 inches thick
-
With a sharp knife cut a large X into dough, slicing about 1/2 deep.
-
Bake at 375 for 40-50 minutes. Test at 40 minutes with a toothpick for doneness, it should come out clean.
