Lasagna is such a traditional recipe in my mind, but why do I think that? It is time to mix things up a little bit. Today we bring you Southwest Lasagna! It is our twist on a classic family recipe that will bring you new flavors and is a great tasting easy dinner idea. Grocery List:
- Olive Oil
- Fresh Jalapeno
- Red, Yellow, or Orange Sweet Peppers
- Sweet Onion
- Salt
- Canned Tomatoes
- Minced Garlic
- Coriander
- Cumin
- Chicken
- Shredded Cojack Cheese (Colby Jack)
- Refried Beans
- Flour Tortillas (This is where we substituted this ingredient with the lavish bread)
Recipe Tips:
- The meat/chicken is optional in this recipe. You can use refried beans for additional protein or use both the chicken and the refried beans as we did in our pictures.
- You could use leftover chicken, store bought rotisserie chicken or saute up some fresh chicken breast as we did in this version.
- I used Joseph’s flax lavish bread as my flour tortillas today. It makes this recipe a little healthier and lower in calorie. Feel free to use what ever your favorite tortilla is. I am sure it could be made with corn tortillas if you prefer
- I have also considered adding a layer of fresh spinach in this as well for added veggies and greens. Fresh spinach makes everything a little better, right?
A southwest flavor inspired lasagna.
- 1 tbsp olive oil
- 1-5 fresh jalapena peppers diced adjust for your desired heat level
- 3 Red, yellow, or orange sweet peppers diced
- 1/2 sweet onion diced
- 1/2 tsp salt
- 28 ounces diced canned tomatoes
- 2 tsp minced garlic
- 1 tbsp ground coriander
- 2 tsp ground cumin
- 1 pound cooked chicken (optional)
- 3 cups shredded cojack cheese
- 16 ounce refried black beans (optional)
- 3-6 flour tortillas

Cook chopped peppers and onions in olive oil in large saute pan over low heat until well softened and cooked through. Add diced tomatoes, cumin, garlic, salt, and coriander. Cook until liquid from tomatoes is reduced and sauce has thickened some. Stir in cooked chicken if using.

In 9x13 pan layer 1/3 sauce, tortilla shells(cut round tortillas to make one layer), spread layer of 1/3 can of refried beans, 1/3 cheese. Repeat two more times for 3 layers.
The number of flour tortilla shells needed depends on the size of your tortillas.

Bake 325 degrees for 30 minutes. Let rest 10 minutes before cutting. Serve with sour cream, extra cheese, cilantro and chips if desired.
