Today’s fun recipe is one that will go into your favorites list. These Mashed potato cakes are perfect for literally any meal of the day. You already know my love affair with potatoes is long lasting, but this just upped the game for me. Super easy to make mashed potato cakes will pair perfectly with virtually any meal, with eggs at breakfast or meat loaf at dinner this will have you covered for the perfect side.
This morning it is so dreary here in MN I knew the only thing that could cheer me up was slinging some crispy potatoes. It is always a crowd favorite when I am in the mood to make everyone a big breakfast. Best part, I made enough to have with dinner too. Potatoes all day and night!
If you aren’t me don’t already have mashed potatoes left over then obviously this recipe is a lot more involved. It would still be totally worth it to make mashed potatoes in order to do this recipe, BUT the real/perfect way to make this recipe is with left overs. It is a great way to eat leftovers without feeling like the food is actually a repeat of the night before. We have a tendency to make too much food at gatherings, so if mashed potatoes are served you better bet we end up with leftovers. Then we end up with these so it is truly a win-win. I figured I would add this disclaimer in so that you don’t get disappointed with me because I claimed these were so easy, they are definitely a longer endeavor if you have to make the mashed-tates specifically to make these.
- 2 cups leftover mashed potatoes
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 egg
- 1/2 cup flour or more if needed
- 2 tbsp milk if needed
- 2 tbsp olive oil
- 2 tbsp butter

In mixing bowl add potatoes, garlic powder, onion powder, egg. Mix well

Form into flattened patties about 3/4 inch thick. These should be soft but thick enough to hold together. Add either a tbsp or flour or tbsp of milk if your patties need to be thicker or thinner consistency to hold their shape as a patty.

Spread 1/2 flour in low side dish. Coat each side of patty with flour.

In frying pan on medium heat olive oil and butter. Place patties in pan. Fry on one side until well browned about 10 minutes Flip over. Brown and cook on second side until well browned about 10 minutes. Patties should be slightly firm to touch when cooked through

Serve with butter, salt, pepper and sour cream if desired.
