A rich one pan bake in the oven Italian comfort food dish.
In large skillet, brown sausage, garlic and onion. Drain. Divide sausage in half. Put 1/2 back into skillet and 1/2 into large bowl
Add cottage cheese, ricotta cheese, 1 cup mozzarella, parmesan and spinach or kale to large bowl with sausage. Mix well.
Stir marinara sauce into sausage in skillet. In large baking dish 9x13 or slightly larger put 1/2 the sausage and sauce mixture on bottom. Stuff cooked manicotti noodles with cheese, sausage, spinach/kale mixture. ****See below for sauce options. Pour remaining sauce over top of stuffed noodles. Sprinkle remaining mozzarella on top. Bake 350 for 40 minutes.
***If desired, you can divide the second half of the marinara sauce in half and add cream to one half. Pour plain sauce on top, then pour sauce with cream added on top. Then top with cheese and bake as directed
You could leave the sausage out and make this a vegetarian main dish.
