Happy Spring and Happy Birthdays at Pot of Gold. As we transition, hopefully, into warmer weather we have fruit on our minds. Is there anything that says warm weather better than delicious fruit crisp? This recipe for Berry Fruit Crisp is delicious and not to mention totally versatile, you could use almost any fruit berries, apples, rhubarb (was the original recipe) peaches, pears…or a combo of many fruits. For this one our very particular birthday wanted mixed berries, but under no circumstances were blueberries allowed into the mix.
This crisp was so delicious that looking at these sugar-coated fruit in a cast iron pan makes me want to ditch the computer and start on another batch! One thing to keep in mind if you are altering which fruit you use it that you may want to alter your sugar amounts. For example our original recipe called for rhubarb, which is pretty bitter on its own so that means more sugar to the recipe. Whereas strawberries and raspberries are on the sweeter side so less sugar is needed. We hope as we are waiting for warmer weather to actually arrive that this recipe helped you stay a little bit more sane and happy. It certainly raised our spirits even though it is snowing again… in April… or I guess almost April. Is this supposed to be some bizarre April fools joke? If so I’m not laughing so come out sun. The best way, or I guess I should say my favorite way to serve this dish is with a bit of homemade whipped cream, you could also serve with ice cream instead, but honestly it isn’t warm enough outside yet for me to consider that route.
- 1/2 cup granulated white sugar(1/2 -3.4 cup) more or less depending on sweetness of your fruit
- 3 tbsp corn starch
- 5 cups fruit (fresh or frozen) I used blackberries, strawberries, and raspberries
- 2 cups oatmeal
- 1/2 cup brown sugar
- 1/3 cup flour
- 1/2 cup melted butter
- 1 tsp cinnamon

In large microwave safe bowl, combine fruit, white sugar and corn starch. Mix well. Dump into greased 10 inch round or square pan.

in same bowl melt butter in microwave. Add brown sugar, cinnamon, flour, and oatmeal. Mix well until a coarse crumble forms.

Sprinkle over fruit until covered. Do not worry if there is a few open spots.

Bake at 350 degrees for 45 minutes or until bubbly and fruit is tender. Serve warm with whipped cream or ice cream.
