Basically you had me at chocolate for this recipe. If you are looking for the best recipe for banana bread then look no further, you have found it. This recipe comes from my grandma and with her pearls and heels in the kitchen, trust me she could do no wrong. I am a super fan of nuts and chocolate chips but if for some outlandish reason that is not up your alley. Then first, I’m sorry, and secondly don’t panic this recipe is in the same caliber of awesome even without the extra goodies!
A moist banana bread
- 1/3 cup shortening
- 1/2 cup sugar
- 2 egg
- 1 3/4 cup flour
- 1 cup mashed ripe bananas about 3 large
- 1/2 tsp baking soda
- 1 tsp baking powder
- 1/2 tsp salt
- 1/2 cup chopped walnuts optional
- 1/2 cup chocolate chips optional

Preheat oven to 350 degrees

In stand mixer or by hand mix/cream shortening and sugar until combined.

Add eggs and mashed banana. If you have a stand mixer you can just add whole bananas as the mixer will mash them up. Option: Lots of times I throw over ripe bananas in a ziplock and freeze them until i have enough to triple this recipe and bake 3 loafs at a time. Partially thaw bananas before you add them if you are using this option. Mix until well combined.

Add remaining ingredients. Mix on low or by had until well combined. Put in large greased loaf pan.

Bake 350 for 45 minutes. Test for doneness in middle with toothpick. Bake additional time if necessary.
One of my favorite things about making this recipe is that it comes from my grandma. My mom has made it my whole life and I feel such a great connection to the past when I’m able to recreate this. When we dug the recipe out to make this last week. My mom told me a sweet story about the origin of the card. My grandma was always a great cook and passed down many recipes. However, she passed away very young and had never written this specific one down. My grandpa, went about painstakingly writing out this recipe so that my mom could have it. So that is why we included that faded note card in with these images. A little piece of our family history that we share with you.
Who else just adores a baking? I have to admit that I have always been more of a baker than a chef. It was probably because my parents always handled dinner when I was young. The only way that I could make a meal to share with anyone was if I made dessert. It was always more enjoyable to share food with other people than to make something for myself. Although I have this theory that the one who makes the food is always the most critical of it. Everyone always says it turns out great, but you always wish you could have found some way to take it up that extra notch. Or am I the only one who feels this way?
