Preheat oven to 350 degrees

In stand mixer or by hand mix/cream shortening and sugar until combined.

Add eggs and mashed banana. If you have a stand mixer you can just add whole bananas as the mixer will mash them up. Option: Lots of times I throw over ripe bananas in a ziplock and freeze them until i have enough to triple this recipe and bake 3 loafs at a time. Partially thaw bananas before you add them if you are using this option. Mix until well combined.

Add remaining ingredients. Mix on low or by had until well combined. Put in large greased loaf pan.

Bake 350 for 45 minutes. Test for doneness in middle with toothpick. Bake additional time if necessary.
