Jump to Recipe Holiday Cranberry Bread
I love holiday baking! There is something so magical and special about holiday seasons. My theory is that it jump starts everyone out of their normal routines. Lets buy that champagne and make that recipe you saved three months ago! Lets decorate and clean the house top to bottom and when it’s all said and done we collapse into a heap of sweat pjs and light a candle and pour that glass of wine! I just adore it, having the family all together, arguing and laughing. I wouldn’t trade it for the world. I can’t get enough of Cranberries at Thanksgiving, one of my favorite things to do with cranberries happens the day after. I love to pile the turkey and stuffing on some toasted bread and use the cranberry as a jelly substitute! Is it just me who loves leftovers almost as much as the original meal itself?Traditionally the go-to dessert for Thanksgiving is some type of Pie. Well maybe you’re the kind of person who either doesn’t like pie (I guess you guys exist..) or gets too stressed out over trying to make the crust turn out how you intended. This is our brilliant solution to both of those issues. I adore this recipe so much that in one of my more destitute years in college I baked several loafs and gave it away as Christmas gifts to my friends and family.
- 4 cups flour
- 1/2 tsp salt
- 3 tsp baking powder
- 1 tsp baking soda
- 2 cups sugar
- 2 eggs
- 4 Tbsp melted butter
- 1 cup orange juice
- 4 Tbsp hot water
- 1 bag cranberries 12-16 ounces roughly chopped.
-
In mixing bowl or stand mixer combine all dry ingredients
-
Make a well and add the egg, butter, juice, and water. Mix until ingredients are combined
-
Rinse and pick through cranberries to remove imperfect ones. I chop with small ninja chopper, but by had with a knife would work too. Add chopped cranberries. Mix well
-
Divide between two greased 9x5 inch loaf pans.
-
Bake 325 degree oven for approximately 1 hour.
Happy Holidays All! Remember to hug your loved ones a little extra tight so they know you mean it! Comment, like, subscribe, and as always please share, because especially around the holidays good friends should share good food.
