If you guys are anything like me you overindulged a wee bit this holiday season. This salad is the perfect transition back to eating like a normal functioning adult. This is the perfect salad, you will crave more and it is healthy too! The cranberry adds a sweet fruit tint and then the chicken and walnuts give you some healthy protein. Then add the blue cheese crumbles and you have a perfect storm!I seriously LOVE this salad. It is great because it is so satisfying it makes eating healthy SO easy and it tastes just as perfect without chicken too so it is easy to make if you are tight for time or if you prefer a vegetarian diet. I actually get midnight cravings for this if that is any hint to how good it is.
- 2 breasts Chicken
- 1 bag Craisins
- 1 bag Walnuts
- 1 Raspberry Vinaigrette
- 1 container Blue Cheese Sprinkles
- 1 bag Spinach

Dice chicken into salad appropriate sizes (think small)

Sauté the chicken pieces in greek seasoning and olive oil until done

Assemble the salad, the amounts are just preference but I would recommend going on the lighter side of ingredients with more leafy green spinach. The ingredients are so rich that you will be surprised at the small amount needed to make your salad healthy and satisfying
