I’ve said it once and I’ll say it again, you had me at potato. Today on Pot of Gold we bring you our family recipe for Cream of Potato Soup. This recipe fits my beloved criteria of being easy, fast, and made in a kettle! This recipe is made with a few simple ingredients and did I mention there is bacon involved?Pot of Gold is totally sticking to its name this month as we have delivered to you mostly soup recipes this month allowing me to harken October as our official soup month. This was not our plan but I guess as the weather turns colder all I want is warm food, preferably food that I can make early in the day and come home to dinner already cooked!This soup is normally really easy. It is basically chopping up your veggies, a little sautéing, and then combining the ingredients. It becomes exponentially harder when your kitchen sink decides to break. Then you wash all your ingredients and your hands in the bathroom sink, which frankly whigs you out a little and causes you a lot of unnecessary trips down the hall. Once you finish your soup and go downstairs to blog about it, well you have just been lulled into a false sense of security. You zone out so hard into your writing that you realize it is not in fact raining outside but raining through the ceiling, thank you dishwasher… Don’t fret! You simply place a large cooler (that you jerry-rig to stay open) under the delicate water fall coming out of your ceiling pipes and wait for code name: “Husband” to get home. While you casually eat a bowl of said delicious soup. Hello Wednesday.
- 6 Cups diced potatoes
- 2 cups diced carrots
- 1 cup diced celery
- 1 cup chopped onion
- 1 1//2 tsp. salt
- 1/4 tsp pepper
- 2 cups milk
- 2 cups half and half
- 6 slices cooked bacon diced

Cook potatoes and carrots in enough water just to cover them. Cook until tender crisp. Do not drain.

In separate pan saute bacon until crisp, drain and set aside. Reserve 2 tablespoons bacon grease.

Saute onion and celery in the 2 tablespoons bacon grease until tender, drain.

Add onion, celery, milk, light cream, salt and pepper to potatoes and carrots. Simmer for 30 minutes (do not boil as it will cause the milk to separate)

Stir in bacon just before serving.

Serve with cheese on top if desired.
So the day might not have turned out but the soup sure did. This awesome inexpensive soup lifted my spirits and warmed me up. Too good, sometimes the days are just a little too much to handle.
