Cream of Potato Soup

Ingredients

  • 6 Cups diced potatoes
  • 2 cups diced carrots
  • 1 cup diced celery
  • 1 cup chopped onion
  • 1 1//2 tsp. salt
  • 1/4 tsp pepper
  • 2 cups milk
  • 2 cups half and half
  • 6 slices cooked bacon diced

Instructions

  1. Cook potatoes and carrots in enough water just to cover them. Cook until tender crisp. Do not drain.

  2. In separate pan saute bacon until crisp, drain and set aside. Reserve 2 tablespoons bacon grease.

  3. Saute onion and celery in the 2 tablespoons bacon grease until tender, drain.
  4. Add onion, celery, milk, light cream, salt and pepper to potatoes and carrots. Simmer for 30 minutes (do not boil as it will cause the milk to separate)

  5. Stir in bacon just before serving.
  6. Serve with cheese on top if desired.
