As summer fades away my itch to start baking and making cozy desserts goes through the roof. This is my middle ground right now. For me, I love cooking outside. In the summer I never want to be shut away from the nice weather, and as fall comes to us (pretty early here in Minnesota) this means football season and that means more grilling! I love it! So here are the sweet deets for this treat.
(Note the $20 supermarket grill.) I never claimed to be high-class, so that was just no lie.
An easy summer desert
- 2 fresh peaches
- caramel sauce
- whipped topping or vanilla ice cream
- Homemade caramel sauce:
- 3 tablespoons butter
- 1/2 cup brown sugar
- 1 tablespoon corn syrup
- 1/4 teaspoon salt
- 1/2 teaspoon vanilla
- 2 teaspoons milk or cream

After grilling quick dessert.

Wash peaches, cut in half, remove pit. Place on grill cut side down for 5 minutes. You will just need to keep checking these as time depends on size of peaches, ripeness of peaches and heat of grill. When browned and grill marks appear on cut side turn over. Grill on skin side for 5 minutes or until peaches are soft when you squeeze them with tongs. Drizzle 1 tablespoon either homemade or store bought caramel sauce over peaches. Grill for an additional 2 minutes. Remove and serve with additional warm caramel sauce and whipped topping of choice or a scoop of vanilla ice cream!!

Caramel sauce: In small saucepan add butter, sugar, corn syrup, cream, and salt. Melt over low heat. Bring to boil. Boil for 1 minute. Remove from heat stir in vanilla. If caramel sauce is too thick, you can add a few additional drops of milk or cream. Extra can be saved for later in the fridge warmed in microwave and thinned with a few drops of milk.
I love this recipe as a slightly more healthy dessert. I am a fan of using low-fat cool whip as the toping because it doesn’t add calories to the meal. The base of the dessert is a peach so the only thing that is really unhealthy may be your caramel. Speaking of Caramel, you cannot go wrong with this homemade caramel recipe, it puts all other caramel to shame!
With fall coming around I am so happy to have been able to share this caramel recipe. I have big plans to come up with some sort of caramel apple goodness! Is it just me or does each changing of the seasons bring with it the desire to get outside and enjoy the great outdoors? I would easily say that summer is my favorite season, but i feel invigorated each time a new season arrives. As if the world has more possibilities that draw you away from the usual daily routine and brings about a new energy. The family is taking a trip this next week to an apple orchard. Just be prepared for a bunch more fall baking goodies.
