Hello All! We bring you today fresh from both our family garden and courtesy of our local farmers market, Salsa Verde. I love this recipe over chips, tacos, eggs, or over roast pork but the possibilities go on from there. On a side note what a glorious week we have been having here in Minnesota. Maybe that is why I am desperate to use the last of the garden veggies before the cold weather really sets in. I am all jacked up because of the sunny days, too bad I work on the nicest Friday this month womp womp. Oh well I will still be outside so the tragedy will be avoided.
I don’t why I get so excited by veggies but I do. They are so pretty and I love the smell of them as you are chopping them up and while they are cooking. This great batch of tomatillos came to me courtesy of my father’s garden. He took pity on my lack of a green thumb this year… I really need to set up an irrigation system in order to keep those babies from drying out! A bit about this recipe that I am happy to share with you today is that this is obviously a REALLY healthy way to spruce up any dish. If you are on a diet and you are sick of having plain scrambled eggs, well don’t self sabotage and reach for the cheese, there are other options. Like might I suggest using this recipe to create your very own delicious salsa verde!
A fresh tomatillo based salsa verde.
- 2 quarts tomatillos husked
- 1 large onion cut into large chunks
- 2 small sweet peppers
- 1 hot pepper or to taste
- 1 1//2 tsp salt or to taste
- 6 cloves garlic or to taste

Peel husks off of tomatillos

In 2 quart sauce pan add tomatillos, cover with cold water

Bring to boil, Simmer until the tomatillos change color. Drain

In food processor, blend tomatillos. Put blended tomatillos in large bowl. Add salt

Blend onions, peppers and garlic. Add to tomatillos. Mix well.

Chill and then taste to see if extra salt, garlic, or peppers is desired.
