I LOOOOOVE this dinner because it is a change from the usual and also it is SO fast to make. Like hardly any prep necessary and the cook time is only what it takes needed to sauté chicken.
I am always a fan of buying the can of whole olives and cutting them into thirds. If you buy pre-sliced olives then you have an even shorter prep time. I just can’t stand paying more, even if it’s pennies just for something to come sliced for me. Maybe it is because growing up it was always my job to cut up veggies while my mom cooked.
- 2 breasts Chicken
- 1 Container Hummus
- 1 Can Black Olives
- 1 Jar Salsa
- 2 tsp Greek Seasoning
- 1/2 Tbsp Olive Oil

Cut Chicken breasts into small pieces

Slice each olive into three pieces, obviously if you bought pre-sliced olives you don't need to do this step. I prefer to buy the whole olives because they are cheaper and I don't mind the little extra step.

Sauté Chicken Breasts in greek seasoning and olive oil

Take taco shells and spread your preferred amount of hummus down the center of the shell.

Add olives, chicken, and salsa down the center on top of the hummus line. (Basically assemble)

EAT!
Sometimes to add a little bit of pazazz I like to tuck one end of the taco shell in and fold the sides in then flip it so the crease is facing down on a cookie sheet. Then I put the sheet in an oven preheated to 350 degrees and keep it in their until the shell is lightly toasted.
This is such a great healthy option for dinner that is so simple to put together and totally delicious. For this time I simply used original hummus and not a flavored version. It is really good both ways it is just a matter of preference. The same goes for salsa. The first time I made it I used homemade salsa and this time I used spicy chipotle salsa and LOVED it. So again this is just totally a matter of preference.
This is one of the dinners that I came up with when we were officially out of food. We liked it so much that it became a regular dinner for us. That is sometimes where my favorite creations come from, when you are left with bare minimum and have to get creative with it.
