Red and rice with smoked turkey is sure to hit the spot. Totally savory and very easy to make. It is so great because the beans and turkey are such a filling and delicious source of protein.
- 1 pound dried red beans pinto beans can also be used
- 1 onion diced
- 1 1/2 tsp salt
- 2 tsp greek seasoning see our shop page for the brand we use
- 1 tbsp minced garlic
- 2 large smoked turkey legs
- 6-8 cups water

Rinse and beans and add to crock pot.

Add onion, salt, garlic, greek seasoning, and turkey legs to crock pot

Add enough water to just cover turkey legs. Usually 6-8 cups

Cook on high 6 hours or on low all day until beans are very soft.

Remove turkey leg and remove skin, bones etc. Add turkey meat back to crock pot in size pieces. Serve over rice.
You could use smoked turkey wings or smoked ham portions with bone instead of smoked turkey legs.
