On days that I am up early enough to consider breakfast to be a reasonable decision I have a hard time choosing what to make. I mean breakfast foods rock, and there is always some way that I can sneak some form of breakfast potatoes into the meal so you know I’m happy there! For when I feel like impressing friends with my breakfast aficionado skills my go to is this perfect french toast recipe. It is so easy and simple, fast to make, and doesn’t include a ton of ingredients so win win I guess.
I just woke up with such an itch this morning to make a big breakfast. The sun is shining at the cabin and the coffee is brewing. It is quiet still with just birds chirping, the wind blowing, and the coffee pot growling. It is the perfect brisk morning before the sun makes everything warm and sleepy again. This recipe reminds me of being a kid again, back when I had others to make my food for me. Since that doesn’t seem to be happening anytime soon, *Ahem* Code Name: “Husband”, I am on my own and I suspect so are you! So here is the best french toast recipe guaranteed to make all picky eaters happy and yourself too because it is fairly fool-proof. The recipe is low in ingredients needed so it is usually easy to make on a whim. I find I usually have everything I need already on hand. A favorite of mine with this recipe is making a bacon sandwich (self-explanatory) or a sausage “corn dog”, where I roll the french toast around the sausage links. I love the combination of savory and sweet it is to die for!
A hearty breakfast of french toast
- 3 large eggs
- 3 tablespoons milk
- 1/4 teaspoon vanilla
- 1/2 teaspoon cinnamon optional
- 4 pieces English Muffin Bread
- dash salt

In low sided dish whisk together eggs, salt and milk. Add vanilla and cinnamon (if using) whisk again.

Dip english muffin bread in egg mixture turning over to thoroughly coat each side. Fry on preheated buttered griddle on medium low heat until first side is browned. Turn over and complete cooking until second side is browned. Serve with butter and syrup of your choice Enjoy
A tip is to make sure you do wait until the bread is at least golden brown. If you take your french toast off early you are going to basically end up with mushy, soggy, egg bread. If you are making a larger batch or the toast seems to be frying too hard or fast adjust heat and feel free to add a little more butter to the skillet to help prevent sticking, of course don’t inundate it with butter a little bit will do just fine.
