Soba Noodle Salad shouldn’t be allowed to taste this good. It is the perfect thing to warm and brighten up our days now that winter is officially here, in Minnesota at least. Soba Noodle Salad is the perfect amount of savory peanut and spicy hot zip it will make any day better. You can make this salad as a main dish or as a side, and now that I am thinking of it this would be a really fun dish to bring to any holiday gathering that you have coming up. It would be a great versatile dish that everyone including your vegetarian friends can enjoy!

A asian inspired cold soba noodle salad with veggies and two salad dressing options.
- 3 tbsp peanut butter
- 1 tbsp tahini optional
- 1 tbsp rice vinegar
- 2 tbsp sesame oil
- 2 tbsp honey
- juice of 1/2 a lemon
- 2 tsp minced garlic
- 3 tbsp Tamari or soy sauce
- 1/2 tbsp chili garlic sauce or more to spicy taste level
- 1/4 cup peanuts
- water to thin to
- 3 tbsp sesame oil
- 3 tbsp Tamari or soy sauce
- juice of 1/2 lemon
- 1/2 tbsp fresh grated ginger 1/2 to 1 tsp ground ginger can be used instead
- 2 tbsp honey
- 1/2 tbsp chili garlic sauce or 1 tsp red pepper flakes optional
- 8-10 ounces cooked soba noodles
- 1/2 cup shredded carrot
- 1/2 cup shredded red cabbage
- 1/2 cup sliced green onions
- 1 cup diced cucumber
- 1/2 cup cut snap peas
- 1/2 cup red or yellow sweet pepper julienned
- 1/4 cup sesame seeds
- diced cooked chicken
- sliced tender asparagus
- edamame
- cilantro
- bean spouts
- chopped peanuts

Add all peanut dressing ingredients except water.to small food processor or blender. Blend until well combined. Thin by adding 1 tbsp of water at a time and blend until desired dressing consistency. Set aside

Add all soy ginger dressing ingredients to blender or shaker. Blend or shake until well combined. Set aside.

Cook soba noodles according to directions on package. Do not overcook.
Drain and rinse with cold water. -
Combine noodles and desired salad veggies in large bowl. Pour on your choice of dressing and toss to coat.
