Soba Noodle Salad with choice of Dressing

Ingredients

Spicy Peanut Dressing

  • 3 tbsp peanut butter
  • 1 tbsp tahini optional
  • 1 tbsp rice vinegar
  • 2 tbsp sesame oil
  • 2 tbsp honey
  • juice of 1/2 a lemon
  • 2 tsp minced garlic
  • 3 tbsp Tamari or soy sauce
  • 1/2 tbsp chili garlic sauce or more to spicy taste level
  • 1/4 cup peanuts
  • water to thin to

Soy Ginger Dressing

  • 3 tbsp sesame oil
  • 3 tbsp Tamari or soy sauce
  • juice of 1/2 lemon
  • 1/2 tbsp fresh grated ginger 1/2 to 1 tsp ground ginger can be used instead
  • 2 tbsp honey
  • 1/2 tbsp chili garlic sauce or 1 tsp red pepper flakes optional

Salad

  • 8-10 ounces cooked soba noodles
  • 1/2 cup shredded carrot
  • 1/2 cup shredded red cabbage
  • 1/2 cup sliced green onions
  • 1 cup diced cucumber
  • 1/2 cup cut snap peas
  • 1/2 cup red or yellow sweet pepper julienned
  • 1/4 cup sesame seeds

optional salad ingredients

  • diced cooked chicken
  • sliced tender asparagus
  • edamame
  • cilantro
  • bean spouts
  • chopped peanuts

Instructions

Peanut Dressing

  1. Add all peanut dressing ingredients except water.to small food processor or blender.  Blend until well combined. Thin by adding 1 tbsp of water at a time and blend until desired dressing consistency. Set aside

Soy Ginger Dressing

  1. Add all soy ginger dressing ingredients to blender or shaker.  Blend or shake until well combined.  Set aside.

Assemble Salad

  1. Cook soba noodles according to directions on package.  Do not overcook. 
    Drain and rinse with cold water.

  2. Combine noodles and desired salad veggies in large bowl.  Pour on your choice of dressing and toss to coat.
