Okay, I know everyone is sick right now. I just got over the plague myself. This soup is the most perfect get well cure! It is really healthy and crazy simple to make so even your sick brain will be able to handle it. I love healthy soups because you never feel like you are missing out on anything. It is delicious, filling, and won’t ruin your new years diet! Win, win, win. Nailed it!
You guys know I adore soup. So you know I know what I’m talking about when I say this soup rocks, I am a soup aficionado and there for you can trust my judgement. I love being able to substitute noodles or rice with quinoa, because not only does it have more nutritional value it is also a less caloric option. Keep in mind however that quinoa likes to absorb liquid the longer it sits so you may have to add more broth to the soup if you are having leftovers. Just to perk it up a little. Quinoa is such a fun super food because it is a vegan source of protein, fiber, amino acids, and a lot of other goodies like vitamins and minerals that contribute to a healthy diet. So spoon on!
This soup has a super short prep time so you don’t have to feel stuck in the kitchen when you don’t feel good. Plus soup is just fun because you get to throw all your good ingredients into a big pot and let it fill your house with homey cooking smells. while you sick on the couch anticipating a bowl.
- 3 Chicken breasts diced into 1 inch cubes
- 2 tbsp olive oil
- 1 large onion diced
- 1 cup quinoa rinsed well
- 1 tbsp garlic minced
- 1/2 tsp salt
- 1/2 tsp greek seasoning
- 1 tsp cumin
- 6 cups chicken broth
- 15 ounces salsa
- 1 can black beans rinsed
- 1 cup corn optional

In dutch oven add chicken, olive oil and onion. Season with salt, and greek seasoning. Cook on medium heat until chicken is lightly browned and onion is translucent.

Add remaining ingredients. Bring to simmer. Simmer for 40 minutes. Serve with cilantro and tortilla chips if desired.
