Southwest Chicken Quinoa Soup

Ingredients

  • 3 Chicken breasts diced into 1 inch cubes
  • 2 tbsp olive oil
  • 1 large onion diced
  • 1 cup quinoa rinsed well
  • 1 tbsp garlic minced
  • 1/2 tsp salt
  • 1/2 tsp greek seasoning
  • 1 tsp cumin
  • 6 cups chicken broth
  • 15 ounces salsa
  • 1 can black beans rinsed
  • 1 cup corn optional

Instructions

  1. In dutch oven add chicken, olive oil and onion. Season with salt, and greek seasoning. Cook on medium heat until chicken is lightly browned and onion is translucent.

  2. Add remaining ingredients. Bring to simmer. Simmer for 40 minutes. Serve with cilantro and tortilla chips if desired.
