You know how we like to take a different twist on some traditional standard dishes. Today we give you our twist on the mediterranean dish Tabouli! Traditionally, Tabouli is made with bulgur but you know how we love quinoa so we started with quinoa and added more fantastic ingredients including parsley, mint, cilantro, onion, cucumber, tomatoes, and seasoned it all with the traditional olive oil, lemon juice, salt and pepper. The first time I tried this I think I ate almost all of it myself in one setting. See our recipe tips and grocery below or jump to the Recipe!
Grocery List:
- Cooled Cooked Quinoa
- Small Tomatoes
- Small Cucumber
- Parsley or Cilantro
- Green Onion
- Fine Fresh Mint
- Olive Oil
- Lemon Juice
- Salt
- Pepper
Recipe Tips:
- To make this into a larger meal you could add Diced Chicken
- This dish is very filling and healthy so don’t discredit it as simply a side, it could easily be your entire meal!

A refreshing savory quinoa based tabouli.
- 3 cups cooled cooked quinoa
- 3/4 cup diced small tomatoes
- 3/4 cup chopped small cucumber
- 1/2 cup minced parsley or cilantro
- 1/4 cup sliced green onion
- 1 tbsp mined fine fresh mint
- 3 tbsp olive oil
- 3 tbsp lemon juice
- 1/4 tsp salt
- 1/4 tsp pepper

In large bowl combine quinoa, tomatoes, cucumber, parsley/cilantro, sliced green onion, and mint.

In small bowl, whisk together olive oil, lemon juice, and salt. Pour over salad ingredients mix well. Chill for 1 hour. Stir well before serving.
