Quinoa Tabouli

Ingredients

  • 3 cups cooled cooked quinoa
  • 3/4 cup diced small tomatoes
  • 3/4 cup chopped small cucumber
  • 1/2 cup minced parsley or cilantro
  • 1/4 cup sliced green onion
  • 1 tbsp mined fine fresh mint
  • 3 tbsp olive oil
  • 3 tbsp lemon juice
  • 1/4 tsp salt
  • 1/4 tsp pepper

Instructions

  1. In large bowl combine quinoa, tomatoes, cucumber, parsley/cilantro, sliced green onion, and mint.

  2. In small bowl, whisk together olive oil, lemon juice, and salt. Pour over salad ingredients mix well.  Chill for 1 hour.  Stir well before serving.
