Summer is just around the corner and we have the perfect light dinner to satisfy without weighing you down. Turkey salad with grapes, celery, and nuts is just what you need for dinner this weekend. Perfect on lettuce or on buttered wheat toast, or just plain in a bowl with a spoon.
I love making a big batch of this so I can take it to lunch all week. It so super easy and you can spruce it up to whatever your taste is. I love adding in dried cranberries and cashews.
We took our old recipe of Turkey salad and spruced it up a bit to be healthier, because lets be honest pasta salad is not salad! So we took out the mayo and substituted it for greek yogurt and it turned out awesome. I couldn’t even tell the difference which is the best way to eat healthy. I am not the kind of person we can eat bland unsatisfying food just because it’s good for me. I would end up with a box of cookies in my hand halfway through the first day. Eating healthy is all about finding different recipes and taking healthy twists on some of your favorites. That way you won’t have to sacrifice health for taste.
Side note this would be perfect to bring on a picnic now that we actually have nice weather here in the state. It is finally starting to turn green around here and I can’t get enough of the outdoors. So extra bonus this dish is fast to make and perfect for a quick snack which means less time in the kitchen and more time enjoying this vitamin D!
- 2 cups leftover roasted turkey diced
- 1 1/2 cups diced celery
- 1 1/2 cups green and/or red grapes
- 1/2 cup minced onion
- 2 cup cooked small shell pasta or pasta shape of choice
- 1/2 cup mayo
- 1/4 cup plain greek yogurt could use all mayo and skip the greek yogurt
- 1 tsp lemon pepper
- 1 tsp red wine or apple cider vinegar
- 1/2 tsp yellow mustard
- juice of 1/2 a lemon
- 1/2 tsp ground black pepper
- 1 tsp greek seasoning.
- 1/2 tsp salt or to taste

In large mixing bowl add diced turkey, celery, onion, grapes and pasta. Mix well

In small bowl add mayo, yogurt, lemon pepper, ground pepper, greek seasoning, mustard, vinegar, and lemon juice and salt.

Combine dressing with turkey ingredients. Mix well

Chill thoroughly and enjoy.
You can add things and swap things in this salad. Swap chicken for turkey. Could use all mayo or all greek yogurt instead of the combination.
Possible add ins:
cashews, sunflower seeds, pepita seeks, diced avacado, dried cranberries, dried cherries
