Turkey Salad

Ingredients

  • 2 cups leftover roasted turkey diced
  • 1 1/2 cups diced celery
  • 1 1/2 cups green and/or red grapes
  • 1/2 cup minced onion
  • 2 cup cooked small shell pasta or pasta shape of choice

Dressing

  • 1/2 cup mayo
  • 1/4 cup plain greek yogurt could use all mayo and skip the greek yogurt
  • 1 tsp lemon pepper
  • 1 tsp red wine or apple cider vinegar
  • 1/2 tsp yellow mustard
  • juice of 1/2 a lemon
  • 1/2 tsp ground black pepper
  • 1 tsp greek seasoning.
  • 1/2 tsp salt or to taste

Instructions

  1. In large mixing bowl add diced turkey, celery, onion, grapes and pasta. Mix well

  2. In small bowl add mayo, yogurt, lemon pepper, ground pepper, greek seasoning, mustard, vinegar, and lemon juice and salt.

  3. Combine dressing with turkey ingredients. Mix well

  4. Chill thoroughly and enjoy.

Recipe Notes

You can add things and swap things in this salad.  Swap chicken for turkey. Could use all mayo or all greek yogurt instead of the combination.

Possible add ins:

cashews, sunflower seeds, pepita seeks, diced avacado, dried cranberries, dried cherries
