Wild Rice Stuffing:
Okay guys I have to best thing to share today. This is such a fantastic change to such a traditional favorite. I ADORE stuffing, like, to an unhealthy amount. This Wild Rice Stuffing is even more addicting. A total comfort food, you don’t have to make a turkey to go with and it is WAY better than stove top. This is a fun dish to bring to a pot luck or to a family gathering. This week and next is totally dedicated to bringing you all a few of our favorite holiday recipes.
Wild Rice Stuffing aka Dressing. Am I the only one who totally doesn’t understand why it would be called dressing? Dressing is something you put on a salad not something that goes with turkey dinner. When someone announces Wild Rice Dressing I am looking for the lettuce people!
- 1/2 cup wild rice
- 1 1/2 cups water
- 1 medium onion diced
- 1 cup celery diced
- 8 ounces sliced mushrooms
- 1/2 cup butter
- 1 cream of mushroom soup
- 1 cup chicken broth or vegetable broth
- 1 bag herb seasoned croutons for stuffing

Add water and wild rice to sauce pan and cook until 1/2 way cooked. Until 1/2 of the water is absorbed. About 30 minutes

Melt butter in large frying pan, add onion, celery and mushrooms. Cook until onion and celery are tender.

In large bowl, mix the cream of mushroom soup, the chicken broth.
Stir in cooked celery, mushrooms, and onions.
Stir rice with its remaining water.
Stir in croutons.

Put in buttered casserole and bake at 350 for 1 hour.
I have doubled this recipe, baked for 1/2 hour and then put in crockpot on low and brought as a great dish for pot luck.
The best part is that all of your friends will be very impressed with this. I mean it’s probably the second best part, the first best is most definitely the fact that this is delicious. This recipe is really quite easy, probably the only downside would be that Wild Rice cooks for like a zillion years…or like 30 but anyways the tip is to give yourself enough time to make this dish.
