Cheeseburger Soup

Ingredients

  • 2 lbs ground beef
  • 1 large onion chopped
  • 2 cups carrots sliced
  • 2 cups celery sliced
  • 2 tablespoons butter
  • 32 ounces chicken broth
  • 4 cups diced potatoes
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cups milk
  • 1/3 cup sour cream optional
  • 12 slices american cheese or more if desired

Instructions

  1. In large pot, brown beef, drain.
  2. In same pan saute onion, carrots, celery in butter until veggies are tender crisp. About 10 minutes.
  3. Add broth, potatoes, beef, salt, pepper. Bring to boil, reduce heat, cover and simmer 10-15 minutes or until potatoes are tender.
  4. Reduce heat to low, add milk, cheese and sour cream if desired. Stir gently until cheese and sour cream are melted. DO NOT BOIL at this point.
  5. Add additional salt and pepper if needed.
