An alternate to use in place of meat in your meal or as a side. A different way to enjoy cabbage.
1 hour before grilling combine oil and minced garlic in small bowl. This allows the oil to be infused with the garlic flavor.
Slice cabbage in half from core to top direction. Slice two 1 inch thick "steaks". Leave core intact for now. Place on grill pan. Brush first side of cabbage steak with oil and minced garlic. Sprinkle with salt pepper and desired seasonings. Flip over, now with sharp knife cut out core. Coat second side with oil, garlic and seasonings. Can let sit and marinade for up to an hour.
Place grill pan on grill. Grill on first side for 10 - 15 minutes or until well browned. Flip using a wide turner to support the layers(this is a little tricky). Grill on second side until well browned and tender crisp.
If you want to eat as a "steak" replacement, grill until tender crisp.
If you would like to use as a "burger" replacement in a bun, I would grill them until they are quite tender.
Can be eaten as a side vegetable as well.
Really you could season these with any of your favorite seasonings in addition to the oil.
I also think that you could do these in the oven on a sheet pan. Bake at 350 for 20 minutes until tender and then broil 5 or so on each side until golden browned.
