Homemade Granola

Ingredients

  • 2 cups old fashioned oatmeal
  • 1 cup sliced almonds
  • 1/2 cup sunflower seeds
  • 1/2 cup chopped walnuts
  • 4 tbsp coconut oil melted
  • 1 tbsp maple syrup
  • 1 tbsp honey
  • 1/2 tsp vanilla
  • 1/4 tsp salt
  • 1/2 cup raisins
  • 1/2 cup dried cranberries

Instructions

  1. Mix oatmeal, almonds, sunflower seeds, and walnuts together in large bowl.

  2. Melt coconut oil in measuring cup.  Add maple syrup, honey, vanilla and salt.  Pour over oatmeal mix.  Stir well until completely coated.

  3. Measure raisins and cranberries into same measuring cup and stir to coat in remaining oil mixture.  Save for later.

  4. Spread  granola onto a parchment paper lined sheet pan.  Bake in 275 degree oven for 20 minutes..  Stir after 10 minutes.  Add  raisins and oatmeal.  Bake for an additional 10 minutes or until oats are golden brown. 

Recipe Notes

You can use a different combination of nuts if you prefer.

If you prefer a sweeter granola, an additional tablespoon or 2 of maple syrup or honey can be added.

Cool completely and store in a dry airtight container.
