A easy healthier granola
Mix oatmeal, almonds, sunflower seeds, and walnuts together in large bowl.
Melt coconut oil in measuring cup. Add maple syrup, honey, vanilla and salt. Pour over oatmeal mix. Stir well until completely coated.
Measure raisins and cranberries into same measuring cup and stir to coat in remaining oil mixture. Save for later.
Spread granola onto a parchment paper lined sheet pan. Bake in 275 degree oven for 20 minutes.. Stir after 10 minutes. Add raisins and oatmeal. Bake for an additional 10 minutes or until oats are golden brown.
You can use a different combination of nuts if you prefer.
If you prefer a sweeter granola, an additional tablespoon or 2 of maple syrup or honey can be added.
Cool completely and store in a dry airtight container.
