Hummus with Garlic and Roasted Red Pepper

An easy homemade garlicky hummus.

Ingredients

  • 2 15 ounce can Chickpeas drain one can and use one can with liquid
  • 2 tbsp minced garlic
  • 2 tbsp olive oil
  • 1 roasted red pepper about 3/4 cup can use fresh roasted or jarred
  • 1 tbsp tahini
  • 1/2 tsp salt or to taste

Instructions

  1. In blender(or food processor)add 1 drained can chickpeas and 1 can chickpeas with liquid included, garlic, roasted red pepper, and tahini.  Blend until very smooth.

  2. Add olive oil.  I add mine as blender is running. Blend well.

  3. Taste, add extra salt and blend if needed.  Refrigerate until well cooled. Serve with crackers and cut up veggies.
