Oatmeal Crispies

A simple oatmeal based cookie with none of the frills but all of the taste!

Ingredients

  • 1 cup shortening we use Crisco
  • 1 cup brown sugar
  • 1 cup white sugar
  • 2 eggs beaten
  • 1 tsp vanilla
  • 1 1/2 cups flour
  • 1 tsp salt
  • 1 tsp baking soda
  • 3 cups oatmeal

Instructions

  1. Thoroughly cream shortening and sugars.

  2. Add eggs and vanilla, beat well.

  3. Add remaining ingredients Mix well

  4. Shape into logs 2 inches wide x 1 1/2 inch tall(see pictures).  Wrap in foil(see pictures).  Chill thoroughly (about 2 hours) . Slice into 1/4 cookies. Bake 350 for 10-12 minutes

Recipe Notes

Cookies are perfect when a light golden brown.

Cookies go from light brown to very brown quickly so keep a close watch from 10 minutes on. 

This cookies have none of the frills but all of the taste!  Great with a cup of coffee or tea or a bowl of vanilla ice cream.
