Sweet Corn Bread

Ingredients

  • 2 1.2 cup flour
  • 1 1/2 cups yellow corn meal
  • 3/4 cup sugar
  • 4 tsp baking powder
  • 1 tsp salt
  • 1 15 ounce can of creamed corn
  • 1/2 cup olive oil or vegetable oil
  • 2 eggs
  • 1 cup or more milk you may use more or less milk

Instructions

  1. In large bowl, add all dry ingredients mix to combine.  

  2. Add oil, eggs, and creamed corn.  Mix well.

  3. Add milk 1/2 cup at a time mixing well after, until batter is consistency thick pancake batter.

  4. Grease 9 x 13 inch pan.  Pour cornbread into prepared pan.  Bake in preheated 400 degree oven for 30 minutes.  Test for doneness.  Tooth pick inserted should come out clean.  Bake additional time if necessary.
