Add first 5 ingredients to bowl of stand mixer. Blend on low speed until firm dough ball develops. This will take quite a bit....like 5 minutes. It will take longer if your butter is not very soft.
Scoop with small cookie scooper or roll by hand into inch balls.
Place on cookie sheet.
Bake 325 for 20 minutes or until just starting to brown.
Take out of oven and immediately roll in powdered sugar. Place remaining 1 cup powdered sugar in small cereal size bowl. Take cookies directly from pan about one at a time and roll in bowl of powdered sugar. I use a spoon to help roll (so I don't burn my fingers) as the cookies are very hot and the powdered sugar melts a little bit. Place on cooling rack to cool completely.
When cookies are completely cooled. Roll each individual cookie a second time in powdered sugar. This makes the cookies extra white and pretty.

Hand mixer.....just place first 5 ingredients in large mixing bowl and blend on low speed with a hand mixer until a dough ball forms
By Hand....I made these cookies for years this way. Make sure you butter is well softened(but not melted....do not use microwave to soften). Add first five ingredients to large mixing bowl. Cream and blend with large mixing spoon until dough ball forms. This will take a will and will count as your gym workout for the day!!
Most of the time I double this recipe, cause 24 cookies just don"t seem to last over night!!
